ANGENETS

1 cup sugar

1 cup butter

4 eggs, beaten

6 cups flour

1 tsp. baking powder

1 tsp. baking soda

1 can frozen orange juice

 

Cream together the butter and sugar. Add remaining ingredients and mix well. Chill for about 10 minutes. Roll into about 80 medium sized balls and place on a greased cookie sheet. Bake at 375 degrees for 8-12 minutes.

BLUSHING BETTY

 

2 lbs rhubarb

1 1/3 cups (c) sugar (divided)

1/3 cup seedless raisins

2 Tablespoons (T) shortening

1 egg

1 cup flour

1 1/2 teaspoons (t) baking powder

1/4 t salt

1/3 cup milk

1/2 t vanilla

 

Wash rhubarb. Do not peel. Cut in 1" pieces. Mix with 1 c sugar. Place in greased baking dish. Add raisins. Cream shortening and 1/3 c sugar. Add egg. Beat well. Sift together flour, baking powder and salt. Add alternately with milk to creamed mixture. Add vanilla. Spread over fruit. Bake in moderate oven (350 ) 1 hour. Serve hot.

SYMPHONY BROWNIE

 

l pkg Brownie Mix for a 13 x 9 pan

Add and mix

2 eggs

1/4 c water

1/3 c oil

 

Line pan or butter and flour a 13 x 9 inch pan -makes for ease of cutting- invert pan. Pour 1/2 batter in pan.  Top with 3 large Chocolate bars Add remaining

batter, cook at 350 for 28-31 minutes.

COCOA KRISPIES SQUARES

 

Combine and cook until bubbles:

 

1/3 cup light Karo ssyrup

1/2 cup bropwn sugar

 

Remove from heat and add:

 

1/2 cup peanut butter

Immediately add 3 cups Coca Krispies. Press into a buttered 9 X 9 pan, cut when COOL  not COLD.

ALMOND CHEWS

  

2 Cups quick-cooking oats                       

1 Cup margarine, melted

1 1/2 cups flour                                        

1 can sweetened condensed milk

1 cup chopped almonds or nuts                

1/4 tsp. almond or vanilla extract

1 cup packed brown sugar    

1 cup M and M's plain chocolate candies

1 tsp. each of soda and salt

 

Combine first 6 ingredients in bowl; mix well. Mix in margarine until crumbly. Reserve 1 1/2 cup crumb mixture. Press remaining crumbs into greased 10 X 15-inch baking dish. Bake 375 degrees for 12 minutes. Combine condensed milk and flavoring. Spread over crumb layer to within 1/4 inch of edge. Mix reserved crumbs with candies. Sprinkle over condensed milk; press in lightly. Bake for 20 minutes longer or until golden brown. Cut into bars. Yields: 4 Dozen.

JULE KAGA BREAD (Pronounced Yule A Kaga) 

Heat 4 cups of milk almost to scalding point. Add 1 cup butter or margarine, 2 cups sugar, 4 tsp. salt. Mix in really large bowl. When cooled to lukewarm, add 3 Tbsp. yeast dissolved in 1 cup warm water (not hot). I put a little sugar in with yeast. When it fizzes up, I pour this into large bowl with other ingredients. Add 4 eggs slightly beaten, 8 cups of flour, 1 tsp. cinnamon, 2 cups seedless raisins, 2 cups mixed candied fruit, 1 cups candied cherries, 2 tsp. crushed cardamom. Mix well. I put candied fruit into food processor to chop into smaller pieces. Then add 8 more cups flour. Let raise until double. Punch down, knead lightly. Form into 6 loaves of bread. Raise again until double. Bake 350 degrees for 40-45 minutes.

 

This is a heavy bread and takes longer to rise the second time. It smells so good while baking.

CHOCOLATE BROWNIES

 

1 cup white sugar

1/3 cup melted shortening (butter)

2 eggs

3/4 cup flour

3 tablespoon cocoa

1/4 teas. Salt

1 teas. Vanilla

1/2 cup chopped walnuts

 

Mix all ingredients together.  Pour into a greased 9"x9" pan.

Bake at 350 for 20 minutes.

LEMON SQUARES

 

1 cup flour

1/2 cup butter

1/4 cup powdered sugar

 

Mix these ingredients together and press into a 9"x9" pan.  (if you place a piece of saran wrap over it while you push it down, it won't get all over your hands). Bake for 10 minutes at 350.

 

Mix and pour over the above:

2 eggs - beaten

2 tbsp lemon juice

1 cup white sugar

2 tbsp flour

1/2 tsp Baking powder

Bake for 15 minutes at 350

 

Frosting:

3/4 cup powdered sugar

1 tbsp butter

1/2 tbsp milk

1/2 tsp Vanilla

THE "BEST" CHOCOLATE SAUCE EVER

 

In a 2 quart sauce pan or larger, mix:

 

1 - 12 oz. can of evaporated milk

2 cups white sugar

Bring it to a boil and turn down to medium and continue to slow boil for about four  minutes, stirring often. Add 3/4 cup of bakers powdered cocoa and 2 tbsp butter to the boiling mixture.  Stir vigorously with a large whisk to blend in the powdered cocoa and butter.  Remove from the heat when it is all blended.

Add:

 1/2 tsp salt

 4 tbsp butter

 1 tsp vanilla

 

Blend all together, cool slightly and enjoy over your favorite ice cream!  Makes about 4 cups.

QUICK CHOCOLATE CAKE

 

4 1/8 c flour                            3/4 c. cocoa

3 c. sugar                                1 1/8 tbsp baking soda

1 1/2 tsp salt                           3 c. water

1 1/8 c oil                                3 tbsp vinegar

3/4 tbsp vanilla

 

Use cake method. Bake at 350 degrees for 30-35 minutes. Makes a large sheet cake or 9 X 13 cake pan with cupcakes. It is a very moist cake.

BLUEBERRY TEA CAKES

 

1 3/4 c flour                                 1 c sugar

3 tsp baking powder                     2 eggs

1 c blueberries                             2/3 c milk

1/8 tsp salt                                  1 tsp vanilla

1/3 c oil

 

Use cake method. Bake 350 degrees for 25-30 minutes.

APPLE CRISP

 

4 c apples                                 1/2 tsp salt

1 c uncooked oats                     1/3 c sifted flour

1 Tbsp lemon juice                    1 tsp cinnamon

1/3 c butter melted                  1/2 c firmly packed brown sugar

 

Peel and slice apples. Put in 9 X 13 baking dish. Sprinkle with lemon juice. Combine dry ingredients; add melted butter, mixing until crumbly. Sprinkle crumb mixture over apples. Bake at 375 degrees for about 30 minutes. I like to make a little extra topping to put over apples.

MOM’S CONGO SQUARES

 

¾ cup margarine

¾ cup brown sugar, firmly packed

¾ cup sugar

3 eggs

1 tsp salt

2 tsp baking powder

2 cups flour

1 tsp vanilla

12 oz pkg of chocolate morsels

 

Preheat oven 350. Combine margarine and both sugars, beat until creamy. Add vanilla and eggs, beating well after each egg. Gradually add dry ingredients, mix well and then stir in chocolate morsels.

 

Spread into a greased 13 x 9 inch pan, bake 35 minutes until golden brown.

 

These taste great with vanilla ice cream too, especially nice and warm from the oven!

NO BAKE MISSOURI COOKIES

 

2 cups sugar

1 stick butter

1/2 cup milk

3 tbsp cocoa

1/2 tsp vanilla

2 cups peanut butter and oatmeal

 

Combine first 4 ingredients and stir until combined, over medium heat. Boil only about 1 minute. Pour into bowl, add peanut butter and vanilla. Mix well, add oatmeal a little at a time until the mix is thick. There is no set measurement for the oatmeal. Drop by tsp. onto waxed paper and place in refrigerator to cool.
